Is there any setting allowing to limit the output data when someone do search query from graylog to elasticsearch cluster ?
What means “output data”?
If you do a query, the query string goes out, and a lot of data comes IN.
Why do you need it?
Have you tried bandwidth limit? 
limit the data that can be queried from elasticsearch, no, bandwidth limit not consider 
look at system > configuration is that limitation what you are looking for?
