I was wondering if there was a way to setup graylog to zip logs for the day into a zip file then zip all of those up at the end of the month?

Actually there is here.

If you under 2 Gb a day you can get a free lincense , if not you can create a snapshot.
From the configuration file it can be place anywhere you want.
Would the second option be taking snapshots of the server? Sorry about the delayed reply.
