When we go to the “Sources” menu, we see the statistics of requests by server, but it is the IP addresses that are indicated here.
is it possible to display the FQDN instead (or in addition) ?

That depends if your sending client is providing the IP or the hostname as source in the messages.
Depending how you process the messages your could use a lookup table to lookup the hostnames from a csv file and add that as a field or replace the source field by that value you looked up.
