How to increase the overall field limit

Increasing total field count per index can incur performance issues, a better approach would be understand why there are over 1000 fields being created and are those fields necessary.
This guide explains how to get about increasing field count both temporarily and permanently but again it’s not an action I would condone unless absolutely necessary.
This looks as though you are running full text queries as opposed to targeted queries. In the case of a full text search, all fields available within the scope of where the query is run (in this case your index which now houses > 1000 fields) are returned which is resource intensive and so Opensearch puts a guard rail in place.
This is a good example of how altering options within Opensearch to compensate for a potential misconfiguration elsewhere can lead to a cascading effect of other issues.

Below is example of a full text vs named filed query, name field queries allow for a more targeted return of data from your indexer.
